The Iberian Shoulder-Ham is smaller than Iberian Ham, and it comes from the 100% Iberian Torbiscal pork`s forward hooves, who has been reared unrestrained in Valle de Los Pedroches holm-oak woodland. It unveils in its texture and flavor the same virtues as the Iberian Ham. The large amounts of aromatic nuances that reveal its bright fat when it gets melt surprise the taste.
Minimum cure 20 months, it depends on the piece weight, in a natural curing room.
